Chopped Kale Salad for Diabetics

Carbohydrate Grams per serving: 10

Take a break from the typical lettuce salad. Try this chopped kale salad with tomato and sweet pepper.

Kale is low in Saturated Fat, and very low in Cholesterol. It is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and rich in calcium. Kale, like Broccoli, contains sulforaphane, a chemical believed to have potent anti-cancer properties, particularly when chopped.

1/2 large bunch kale, washed, stems removed, and chopped
1 plum tomato, chopped
1/3 cup chopped red sweet pepper
1/4 cup pitted ripe olives, quartered lengthwise
3 radishes, thinly sliced and halved, if desired
2 green onions, sliced
2 tablespoons raw sunflower kernels

Instructions:

In a large bowl, combine kale, tomato, sweet pepper, olives, radishes, green onions, and sunflower kernels. Toss gently to mix.

This salad goes great with an Asian salad dressing. Toss gently to coat.

Roasted Chestnut Soup for the Holidays

Time: Less than one hour

Create a healthy holiday table with chestnuts. Rich in nutrition, chestnuts are a delicious and healthy food - packed full of important nutrition.

Chestnuts are low-fat, gluten-free, a good source of fiber, surprising amount of vitamin C (infact, they are the only “nuts” that carry vitamin C!), and they have beneficial fatty acids. Chestnuts have a wonderful crumbly texture and mild sweet flavor.

To deliver the warmth of the Holidays, try this soup with its rich, creamy distinctive flavor.

10 large chestnuts, peeled or unpeeled
4 cups quality chicken stock
2 tablespoons extra virgin olive oil
2 cups chopped celery
1/2 cup chopped onion
Chopped celery leaves or parsley for garnish
Fresh ground black pepper
Salt, to taste

Instructions:

If you already have peeled chestnuts, proceed to the next step. Otherwise, preheat oven to 350 degrees. Using a sharp paring knife, make an “X” on the flat side of each chestnut.

Roast in an open pan for 10 to 15 minutes, or until the skins begin to open away from the meat. Remove both outer and inner skins while chestnuts are warm.

Place olive oil or butter in deep skillet or casserole, and turn heat to medium. A couple of minutes later, add celery, onion and a good sprinkling of salt and pepper, and cook, stirring occasionally, until onion is translucent, about 10 minutes. Add stock and chestnuts, bring to a boil and partly cover. Lower heat, and simmer until chestnuts are mushy, about 30 minutes.

Carefully puree soup in a blender, or cool and then puree. Measure and add water to total 6 cups of liquid. Reheat, adjust seasoning if necessary and serve, garnished with celery leaves or parsley.

Immune Soup for Colds and Flu

Begin eating this soup at any sign of a cold or flu. Garlic has potent antioxidant properties and is a good source of immune-boosting selenium. Medicinal mushrooms like Shiitake contain various powerful antioxidant, antibacterial and infection-resistant properties.

1 small onion
1 tablespoon olive oil
2-3 Shiitake mushrooms, cleaned and sliced
1 can chicken broth
3-4 cloves garlic, peeled
Fresh ginger (amount based on personal preference), peeled

Instructions:

Heat the olive oil in a pan and brown the onion until translucent. Add the mushrooms and brown them. Pour in the can of chicken broth.

With a garlic press, squeeze garlic and ginger into the broth mixture.

Stir well, heat thoroughly and serve.

2 tablespoons olive oil
1 tablespoon flax oil
1 tablespoon white balsamic vinegar
1 teaspoon lemon juice
2 tablespoons capers
Salt to taste
Freshly ground black pepper

In a small bowl, whisk the together olive oil, flax oil, balsamic vinegar, lemon juice and capers. Season with salt and pepper.

A Garden of Healing - September 11

EMOTIONAL HEALING

Everybody deals with grief differently. One great tragic event took place here in New York City on September 11, 2001. Grief still exists in various degrees for different people in this great American city.

All of us have our own memories of that day. I did not lose anyone directly. My wife at work was witness to many things close up and personal as her building was only a few blocks away from the infamous ground zero.

The term of being shell shocked, for some time afterwards, comes to mind for my own situation. We all in this city continue to share the grief and tragedy of that day.

I live in Staten Island, one of the five boroughs of NYC. Staten Islanders have always represented a large number of workers in downtown Manhattan. The ferry across the bay takes us locals to the foot of Manhattan.

Staten Island shares with the other boroughs in terms of civilians, policemen, emergency workers and firefighters who died on that day. Here in my neighborhood, there is an abundance of tales from running into the friends and relatives of people who died that day.

I was witness to a local and temporary shrine on September 11, 2007. A photograph of a dead firefighter, father, husband, and neighbor was tacked onto a wooden electric pole and flowers and candles were on the ground. The dead and our heroes are not easily forgotten here. Grief lingers on, even now, almost seven years after the fact.

There is a recently opened 911 memorial on the grounds of Snug Harbor, a local park, to remember all Staten Islanders who died that day. I understand that similar memorials are open in all five boroughs to remember the local victims of that day.

One of my great disappointments of late is to see that a “Garden of Healing” in the local Snug Harbor Cultural Center here in Staten Island is not finished. It lays fallow and unfinished, a victim of budgets.

This healing garden when it gets finished will go down a zig zag wooded path from one elevation to another. Some of the rustic looking rough timber-cut benches along the way are supposed to be used to meditate and to heal. Memorial plaques on benches are already in place about this city park.

This healing garden will be here for the loved ones, friends, and neighbors, to deal with grief and the loss of these 267 Staten Islanders (civilians as well as those on duty) who died on 9/11. Seventy-eight of the 343 firemen killed on that infamous day made their home in Staten Island. With five boroughs that make up New York City, Staten Island had the largest percentage of loss for firemen in the city.

It is most fitting that here on Staten Island and in the peaceful nature setting of Snug Harbor Cultural Center that there will be a place for Staten Island families and friends to come together or be alone and pray or meditate and remember those lost on September 11, 2001.

Healing does take time. And sad to say, budgets and construction schedules, take time as well.

Life goes on here in Staten Island and the dead are remembered. They are not forgotten.

Sweet Pea and Mint Soup

Sweet Pea and Mint Soup

Servings 4

Start with Frozen Peas, the small vegetable with big potential. Fresh green peas are harvested at their peak and frozen immediately. Both fresh and frozen peas work for this recipe.

2 tablespoons olive oil
1 cup chopped yellow onion
2 cups chicken or vegetable broth
4 cups frozen peas
3/4 cup loosely packed mint leaves
1 teaspoon kosher salt
1 teaspoon sugar

Directions:

Heat the olive oil in a saucepan over medium heat. Add the onion and saute for 3 to 4 minutes or until tender. Add the broth and bring to a boil.

Place the peas, mint, salt, and sugar in a blender. Blend until smooth.

Pour the hot broth mixture over them and return everything to the saucepan to heat through. Serve warm.
